Braise to Perfection: A Guide to Making Delicious Osso Buco

- 4 veal shanks, about 1 1/2 inches thick
- Salt and pepper
- 1/2 cup all-purpose flour
- 1/4 cup olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 garlic cloves, minced
- 1 28-ounce can diced tomatoes
- 2 cups beef broth
- 1 cup dry white wine
- 1 tablespoon tomato paste
- 1 teaspoon dried thyme
- 1 bay leaf
Preheat the oven to 350°F.
Season the veal shanks generously with salt and pepper, then dredge them in flour, shaking off any excess.
In a large Dutch oven or oven-safe pot, heat the olive oil over medium-high heat. When the oil is hot, add the veal shanks and brown them on all sides, about 10 minutes total. Remove the shanks from the pot and set them aside.
Add the onion, carrots, and celery to the pot and cook for about 5 minutes, until the vegetables are softened. Add the garlic and cook for another minute.
Add the diced tomatoes, beef broth, white wine, tomato paste, thyme, and bay leaf to the pot, stirring to combine. Return the veal shanks to the pot, spooning some of the tomato sauce over them.
Cover the pot with a lid and transfer it to the oven. Bake for 2 to 2 1/2 hours, until the veal is tender and falling off the bone.
Remove the pot from the oven and let it sit for a few minutes before serving. Spoon some of the tomato sauce over each veal shank and serve hot.
