Product Description

The Pork Jowls are the biggest cut of meat on the head. They are fatty and delicious and can be used to make an Italian smoked meat called “guanciale” which is similar to bacon but fattier amongst other delicious applications.  Jowls are generally put into trim to make ground pork/sausages but we have now started to offer this cut for the adventurous chef!

Pork jowl is nearly identical to pork belly bacon in terms of look, texture, and flavor profile. The primary differences are that the jowl has a slightly higher meat-to-fat ratio than traditional back bacon and usually comes with a rind of skin around the outside, similar to pork belly.

Sourced from local farms dedicated to naturally raising heritage pigs in a free range environment — these pigs are forest finished for an undeniably enhanced flavour. Like all of our products, our pork is completely antibiotic and hormone-free, given a vegetable feed with no soy products.

Each Pork Jowl is professionally butchered, quickly flash-frozen and vacuum-packed.

We work with farms that only produce the cleanest, healthiest, and ethically-raised local meats. All pork is Federally or Provincially Inspected according to Canadian Food Inspection standards.
